Millet
Indian Millets are nutritionally superior to wheat and rice as they are rich in protein, vitamins and minerals. They are also gluten-free and have a low glycemic index, making them ideal for people with celiac disease or diabetes. India is among the top 5 exporters of millets in world.
Pearl millet (Bajra), Sorghum (Jowar) and Finger Millet (Ragi) constitutes the largest share in India's total production of millets. Millets are a group of cereal grains that belong to the Poaceae family, commonly known as the grass family. It's widely consumed in developing countries throughout Maharashtra. While it may look like a seed, millet's nutritional profile is similar to that of sorghum and other cereals.
Millet is rich in niacin, which is important for healthy skin and organ function. It also has beta-carotene, especially the dark-colored grains, which converts to vitamin A, helps your body fight free radicals, and supports your immune system.
